Choosing the Right Loose Kitchen Knives for You
As passionate cooking enthusiasts, our team understands the importance of having access to top quality chef’s kitchen knives, but we also know that there are so many brands, styles, shapes and sizes in the market that it can be overwhelming to know which one best suits your needs.
There are many factors that will determine if a particular knife is perfect for you, including your comfort level handling knives, the size of your hands, whether you are left or right handed and the methods and techniques you use in food preparation and cooking.
Every knife should act and feel like an extension to the hand
Comfort is key. Some knives have rubber handles for extra grip and others are ergonomically moulded to suit the contours of the hand, some even combine the two.
Consider the material of the blade
Knife blades are commonly made from the below materials:
- Stainless steel - The most common blade, they are simple to sharpen and don’t rust easily. However, some inferior stainless steel knives are prone to flexing, bending and going blunt quite quickly.
- Carbon steel – Carbon steel knives stay sharp for a long time. However, they are susceptible to rust so they require a little more care and maintenance.
- Damascus steel – For serious cooks, these knives are often handmade and are striking in design. They have a carbon steel core and a stainless steel exterior for extra strength and sharpness.
- Ceramic - Sharp and lightweight, ceramic knives don’t rust and rarely need sharpening However, they can chip and when they do need sharpening they require a specialised diamond knife sharpener.
The weight of a good knife should be equally balanced between the handle and the blade
If the handle is too heavy, it may not cut as effectively and if the blade is too heavy, it will likely be uncomfortable to use.
Check the tang for a sign of quality
‘Tang’ refers to the part of the blade that extends down into the handle. Where the blade is one solid piece that runs down the full length of the handle, this is known as full tang and is usually the best choice. Full tang knives have better balance and a more robust design, there's also no danger of the handle breaking off or coming loose from the knife blade.
Which Loose Knives Should I Buy?
Vegetable knives, boning knives, bread knives – with so many knives available you might be wondering if one is better than the other or if you really need them all.
Having personally tried and tested thousands of knives, we can recommend investing in at least one or two premium, durable knives that are comfortable and slice with precision. Start with the simple, universally popular, vegetable knife. This is the most versatile knife and is capable of slicing, dicing and chopping everything from herbs and nuts to meat and even small bones without any trouble.
