This double-faced stone is a true professional at sharpening stainless-steel and carbon knives. The light side handles basic sharpening. The darker, coarse side repairs nicks in the knife's edge and restores the overall shape of the edge. The stone includes a rubber-footed tray that holds pieces steady during sharpening.
