The GS-38 is a beautiful little paring knife useful for lots of little tasks in the kitchen. It is the hollow handle alternative to the GSF-15 and often found in more recent sets. The hollow handle has an ergonomic shape making this little knife comfortable to handle . The GS Series is Global's range of small and medium sized knives and encompass everything from cook's knives to tweezers and spatulas. All GS knives are made with their Chromova18 stainless steel. The knife has been made from a premium quality stainless steel that has been through a series of treatments in order to ensure its supreme performance. After being ice tempered and then hardened to Rockwell C56 - 58°. This treatment results in a razor sharp edge that will glide through any kind of food. It will retain its cutting edge for longer and is rust, stain and corrosion resistant.
